What’s Up Wednesday – July 2020

It’s my third edition of What’s Up Wednesday!

The last Wednesday of the month I link up with Mix and Match Mama and share all the things! It’s a little food, a little family, a little what we’re doing, a little what we’re watching and a little bit of everything else, all in one post.

So let’s look at July!

WHAT WE’RE EATING THIS WEEK:

I am literally meal planning as I type this!

I am making ALL NEW recipes this week (scary and exciting all at the same time)! First, a HUGE THANK YOU to my amazing neighbor who happened to have the Thug Kitchen cookbook that I could look over! And I printed a couple recipes from the Thug Kitchen website as well as one from Skinnytaste. So here’s the plan for the week:

I am going to have to make a few adjustments with some items to make it gluten-free and I will swap maple syrup in some of the recipes for honey. Hopefully it will work just fine! I am making my own homemade nut cheese from Danielle Walker’s cookbook and her marinara sauce. I also have a delicious homemade enchilada sauce recipe that I will make Thursday for Friday’s recipe.

WHAT I’M REMINISCING ABOUT:

An adults-only night out on the boat! It was sooooo long overdue! It was nice to social-distance on the boat with two other couples and grill dinner, float, and just enjoy the sunset sans kids.

WHAT I’M LOVING:

I am absolutely LOVING my early morning walks! I go as soon as my littlest wakes up (about 6:30am) and get him situated and then I head out the door (don’t worry…Daddy is home!) and walk for about 20-30 minutes and soak up the sunrise, quiet, and all the nature sounds!

WHAT WE’VE BEEN UP TO:

We went on a little family bike ride last weekend and took a trail that lead to the lake. The boys got a little muddy but we all had fun exploring!

We are about to finish our FOURTH week of homeschool and we are loving it!!

We are enjoying the lake as much as possible before summer is over!

WHAT I’M DREADING:

Honestly not much right now! I am trying to love each day and just taking things one day at at time.

WHAT I’M WORKING ON:

Homeschooling! Haha! That is seriously a wonderful task all on it’s own. I was working on a preschool curriculum for our 3-year old so I could have more of a plan for him…but I think I got a little too courageous and need to go back through and edit some stuff 😉

I am also in the thick of writing a feature article for a local magazine and can’t wait to see it all put together!

WHAT I’M EXCITED ABOUT:

There are a couple of things that I REALLY excited about but waiting a bit longer before I can share with all of you…but I promise I will share with you as soon as I can!

WHAT I’M WATCHING/READING:

We just finished Down to Earth and I absolutely loved it!!! Got me so fired back up to take better care of this planet. Each episode stood alone and was about a different country and topic. I highly recommend watching it!!

I have been replaying the Hamilton soundtrack a bit too much over here (but can it really be too much?!? Haha!), and so interested in Hamilton and his life…so much so that I downloaded this book:

WHAT I’M LISTENING TO:

Whenever I am on my morning walks, I listen to Ruth Cho Simons and Troy Simons podcast, Foundations, and it is so calming, refreshing, comforting, encouraging…all the things. Listening to these two talk about God and basically preach to my soul…it is so needed and so nice. Their website describes Foundations as follows:

I usually leave one earbud in and leave the other out so I can still hear the birds while I walk. Each podcast is usually the length of my walk, too, which is perfect! I hate starting and stopping podcasts, because I usually forget what was previously mentioned 😉

WHAT I’M WEARING:

WHAT I’M DOING THIS WEEKEND:

Every summer post is going to be pretty much the same…GOING ON THE BOAT! Haha!

WHAT I’M LOOKING FORWARD TO NEXT MONTH:

My hubby’s birthday is in August and it is going to be worth celebrating! I love birthdays and his is no exception! I will cook his favorite foods (cause thats my love language!) and we most likely will go on the boat that weekend.

WHAT ELSE IS NEW:

Not much else!! Just enjoying my quiet walks in the morning, homeschooling, reading, watching shows, cooking, cleaning…same ol’ same ol’!


Well, that’s it for July!! It seems like the months are just FLYING by!
